If a pick is called the disc goes back to the thrower, whether it was in the air or not. The only exception is if the D gets the interception, in which case if the disc was in the air when 'pick'was called then the play stands (it is polite for the team that made the interception to shout 'play on' in these instances). If the interception was made but 'pick' was called while the disc was still in the thrower's hand then it is not a turn-over (as the offence had possession when the pick was called). Continuation can be called by the team that calls a pick (its a bit like withdrawing the pick call), though it is not usual to do so (it's likely to confuse your team mates). What actually constitutes a pick is an altogether much harder question which the rules duly address by being especially vague (' No player may establish a position or move in such a manner, so as to obstruct the movement of any player on the opposing team').
